Sheet Pan Maple Soy Chicken & Broccoli
I’ve recently started cooking with maple syrup more often after realizing that it can be used in many things just like honey. When making any kind of stir-fry type dish, I tend to make them pretty spicy so it’s nice to balance it out with some sweet too.
I enjoy a wild amount of garlic, don’t ever feel obligated to use as much garlic as I do - but I’m a big believer in measuring with your heart, and if you use the whole bulb of garlic, nothing is going to waste!
This Sheet Pan Maple Soy Chicken & Broccoli requires minimal dishes (mix everything on the sheet pan, no bowl required!) and is super easy to throw in the oven on a busy weeknight!
Ingredients
2 boneless, skinless chicken breasts, cut into bite size pieces
340g broccoli florets (1 small bag from President’s Choice)
1/3 cup pure maple syrup
1/4 cup soy sauce
An entire bulb of garlic, finely minced or grated
Red pepper flakes
Salt & pepper
The juice of 1 lemon
For Serving:
Steamed white rice
Green onions
Steps
Preheat your oven to 425 F
Arrange the chicken & broccoli on a lined sheet pan (I use reusable silicone mats!)
Season with salt & pepper
In a bowl, combine the maple syrup, soy sauce, garlic and red pepper flakes
Pour sauce over chicken and broccoli and stir to coat
Place in oven for approximately 25 minutes, until cooked through
Remove from oven, add lemon juice and stir
Serve over white rice, top with green onions and additional soy sauce, if desired.
